Introduction

BLACK SESAME SEED BUTTER



Butter

Butter is a dairy product made by churning fresh or fermented hard cream or milk. It is generally used as a spread and as a condiment as well as in cooking applications such as baking, sauce making, frying and also noodle making. Butter consists of butterfat, water and milk protein. Butter is produced by agitating cream, which damages these membranes and allows the milk fats to conjoin, separating from the other parts of the cream. Variations in the production method will create butter with different consistencies, mostly due to the butterfat composition in the finished product.



Butter contains fat in three separate forms: free butterfat, butterfat crystals, and undamaged fat globules. In the finished product, different proportions of these forms result in different consistencies within the butter; butters with many crystals are harder than butters dominated by free fats.

Objective



Why creating black sesame seed butter:



1. The black sesame which is oil based can easily mix and match with the butter as compared to, for example, an Aloe Vera butter.



2. The five colors of food that are good for the five principles organs are: RED- for heart

WHITE- for lung

BLACK – for kidney

GREEN – for liver

YELLOW – for stomach/ Intestines


Many people go through life without ever suffering a kidney problem. But anyone who has had to live with any kind of kidney problem--kidney stones, a kidney infection, or kidney cancer--knows how such health concerns can impact everyday living.

The kidneys are bean-shaped organs that are located inside the body, near the bottom of the rib cage. There's one on each side.

A kidney is brownish-red in color, and its primary function is to filter waste materials and toxins from the blood. It does this by producing urine.

Another function of the kidneys is to produce certain hormones related to keeping bones strong and healthy, and helping with the creation of certain red blood cells.

“Renal” is a term that is often used by medical professionals in relation to the human kidney and kidney problems.

The ailment related to the kidney problem are Nephrotoxicity, Azotemia, Proteinuria, Urinary Tract Infection (UTI).

ACCORDING TO STATISTICS, ABOUT 15,000, KIDNEY PATIENTS UNDERWENT DIALYSIS NATIONWIDE LASTYEAR AND THE NUMBER IS EXPECTED TO INCREASE BY 2010 - GHAZALI AHMAD, (A CHIEF NEPHROLOGY DOCTOR OF KUALA LUMPUR HOSPITAL -KLH) -BERNAMA 9TH MARCH 2010

The black sesame seeds are exceptionally rich in iron B GGIG, magnesium, manganese, copper, calcium and contain vitamin B1 and vitamin E ( tocopherol QFV) with antioxidant and anti-cancer properties.

Black sesame seeds also contain phytosterols associated with reduced levels of blood cholesterol. Even though oil content is high, between 40% and 60%, the oil has a distinctive flavor, and is rich in antioxidants which give it a long shelf life.



The black elements that believably good for the kidney, also helps to strengthen the bone and teeth density and promote healthy growth, besides darkens your hair.



Hair is very important for your look. Losing out hair or graying of hair changes your physical appearance. It makes you look old or ageing. Many people are worried about this especially those who are really concerned with their physical appearance. Receding or thinning hair requires immediate attention before the problem becomes more critical. The cost for hair treatment is high and there is no guarantee of 100% success.



Taking a small amount of black sesame seed regularly helps prevent hair loss and graying of hair. It promotes healthy hair through natural process.



Black sesame seeds also contain phytosterols associated with reducing levels of blood cholesterol. Even though oil content is high, between 40% and 60%, the oil has a distinctive flavor, and is rich in antioxidants which give it a long shelf life.



3. While the black sesame seeds are more flavorful and have a strong aroma than the white or brown sesame seeds, the black charcoal color of the seed will also give a new dimension to the butter product. This is called innovation.





To make black sesame seeds butter, we need:

* Hard/heavy cream- 2 litres
* Black sesame seeds- 50 gm
* Ice water – as needed
* Sea Salt (optional) – as needed
* Wax paper and butter moulds

Method:

1. Chill your bowl in the refrigerator prior to butter making. Let the cream warm to room temperature

2. Pour the cream into the bowl. Whip it until it gets stiff. It will go until two different stages- the whipped cream stages and the break down stages. Continuous whipping. The cream will suddenly turn to butter.

3. Wash the butter by adds the cold ice water and run under low speed for one minute. Drain the water out of the mixer. Repeat if the water still not clear.

4. Add the butter with ground black sesame seeds

5. Shape the butter and refrigerated.



From the proposal, we try to enhance and improve the butter as using an organic product where as an organic product everyone knows it is better to choose than conventional products.





Conventional vs organic farming

The word "organic" refers to the way farmers grow and process agricultural products, such as fruits, vegetables, grains, dairy products and meat. Organic farming practices are designed to encourage soil and water conservation and reduce pollution. Farmers who grow organic produce and meat don't use conventional methods to fertilize, control weeds or prevent livestock disease. For example, rather than using chemical weed killers, organic farmers may conduct sophisticated crop rotations and spread mulch or manure to keep weeds at bay.

Here are other differences between conventional farming and organic farming:

Conventional Farmers

Apply chemical fertilizer to promote plant growth.

Spray insecticides to reduce pests and disease.

se chemical herbicides to manage weeds.

Give animals antibiotics, growth hormones and medications to prevent disease and spur growth.


Organic Farmers

Apply natural fertilizers, such as manure or compost, to feed soil and plants.

Use beneficial insects and birds, mating disruption or traps to reduce pests and disease.

Rotate crops, till, hand weed or mulch to manage weeds.

Give animals organic feed and allow them access to the outdoors. Use preventive measures such as rotational grazing, a balanced diet and clean housing to help minimize disease.

1st lab test" Black Sesame Seed Butter"

1) 2tbs Salt
2) 2 1/2 tbs Black Sesame Seed (Blended)
3) 1liter Milk
4) Ice Water

a) Greased paper
b) Baking tray
c) Clean cloth (optional)

Methods


Prepare all the ingredients like the above picture.
Whisk the milk cream until it is thick and forms into a buttery texture.
Blend the black sesame seeds finely
Then add into the milk cream
Prepare ice water( to cleanse the butter and also to keep it from melting)
Whisk the milk cream until it hardens
Strain the access water from the butter and placed it into the baking tray.


Lastly placed the butter into a chiller so that it will stay solid. Butter is now ready to be use for cooking, baking, etc.

Second Lab Test " Apple Pie And Butter Cookies"
Ingredients for Apple Pie
The Fillings
5-8 nos : Granny Smith apples or other crisp hard apples of your preference.
2 nos : Macintonsh or "softer" apples of your liking.
4nos : Lemons.
1Stick : Black Sesame Seed Butter.
Brown sugar to taste.
Cinnamon stick.

The Pastry

62g : Black Sesame Seed Butter.
62g : castor Sugar.
125g : Soft Flour.
a pintch of salt.
1-2tbs : Milk.


Firstly she prepare the apples by peeling of the skin and cutting it into bite size.
she then added all the other ingredients into the apples and monitor it until the sugar caramelised .
This is what it turned out in the end. The apple has already caramelized.
Prepare the pie pastry first by beating Black Sesame Seed Butter and sugar till it is soft and creamy. Then add in flour and the rest ingredients till it form a soft dough, let it rest for 20minutes. Later roll out the dough to your preferable liking.
"The pie crust is firstly baked before adding the feeling in. "
Cover the pie with the remaining dough and baked it another time, till it turn golden brown.
the apple pie is now ready to be eaten.

Butter Cookies
The ingredients stated below.



1cup : Black Sesame Seed Butter
4 1/2 cup : Flour
1/2 cup : Corn Flour
1/2cup : Custard Flour
1 cup : Castor Sugar
1nos : Egg Yolk
1tbs : Baking Powder



Firstly beat Black Sesame Seed Butter with Castor Sugar until fluffy, then add Egg yolk and beat it well.

Next add all the dry ingredients and combined it evenly to form a dough.
Roll out the dough and mold it to your preference. Baked in a oven over 180C until it is turn golden brown.

The cookies is now ready to be eaten.

Third lab test : Butter Cake

The ingredients for Butter Cake are

2nos : Eggs.
60g : Black Sesame Seed Butter
190ml : Milk
340g : White Wing's Golden Butter Cake Mix


Add all the ingredients into the mixer, together with White Wing's Golden Butter Cake Mix.
Beat all the ingredients together well, then add the Black Sesame Seeds in. Beat it with medium speed about 5minutes, don't let it be over beat.
Pour the batter into the baking pan.
Bake the cake in an oven over 180C , for about 40-50minutes.
After cake is evenly bake, let it rest and cooled down at room temperature for about 5minutes before taking it out from the mold.
Take the cake out from its mold. The cake is now ready to be serve.

Forth lab test : Black Sesame Buttered Rice

Ingredients

4cups : Uncooked Rice (washed clean)
2nos : garlic (chopped)
60gm : Black Sesame Seed Butter
1cube : Chicken Stock
Salt as needed
5cup : Water
1tbs: Black Sesame Seed



Prepare all the ingredients like the picture above.
Preheat the butter in a small pot.
Bring to saute the garlic until golden brown
Add rice and saute it for 20 seconds
Add chicken stock,salt and saute it till it is mixed evenly.
Add water, stir it a little and leave it to boil till it is fully cooked.

Chicken Stew


Ingredients

1inch : Ginger (sliced)
3nos : Chicken Breast (cube)
1/2nos : Onion(chopped)
3tbs : Coriander Powder
2nos : Celery (cut 4)
1tsp : Garlic (chopped)
1tsp : Salt
4tbs : Black Pepper
1tbs : Vegetable Oil
1/4cup : Brown Sugar
1cup : Water
2cup : Low Fat Milk
2tbs : Black Sesame Seed Butter
1tb : Black Sesame Seed
2nos : Carrot (cube)
2nos : Onions (wedges)
3tbs : Paprika Powder.

Prepare all the ingredients like the picture above.
Start with seasoning the chicken breast first.
Add Coriander Powder.
Chopped garlic, salt and pepper
Mix it well and put it aside for it to absorb the seasoning for at least 30minutes.
Prepare the rest of the ingredients to make the gravy.
Melt Black Sesame Seed Butter and Vegetable Oil in a pot.
Add brown sugar and leave it to melt together with the butter and oil.
Add chicken breast and carrot.
Stir it continuously and leave it to cook for 2minutes.
Add in celery,water, milk, soy sauce, onions. Lastly add salt and pepper for taste.
Serve the chicken stew with Black Sesame Seed Butter Rice.

Black Sesame Buttered Fingers with Cheese

Ingredients

8cups Bread Flour
2tbs Water
1nos Egg
3cups Fresh Milk
1 1/2cups Black Sesame Butter
5tbs Brown Sugar
2tsp Salt
10grm Dry Yeast
20grm Bread Improver
500grm Mascarpone Cheese
60grm Castor Sugar
50grm Castor Sugar (for sprinkle)



First add Flour
Then mix the flour with dry yeast and bread softener.
Add fresh milk
Next add the salt, sugar and brown sugar
Mix the ingredients well
And Add in Black Sesame Seed Butter
Mix the batter till it forms a dough.
Later add water and mix the dough well.
After the dough is done. Let it rest till it rise up to 2 times its size.
Scale the dough to 50grm each. fill the dough with mascarpone cheese and reshape the dough to finger's shape.
Bake the dough at 200C for 15minutes.
Eggs wash and sprinkle sugar and bake it for another 5minutes.

Black Sesame Seed Bun

Ingredients

600grm Bread Flour
4tsp Instant yeast
1 1/2tsp Salt
90grm Castor Sugar
24grm Skimmed Milk
1sp Bread Improver
1nos Egg
288grm Water + 60grm Black Sesame Seed Butter
200grm Cheddar Cheese
Prepare all the ingredients.
Add yeast to the bread flour and combined it well.
Then add salt
Add Sugar
Bread improver
And Black Sesame Seed Butter. Mix the ingredients well.
Later add the milk
And add Water, Combined all the ingredients until it forms a soft dough.
Knead the dough and let it rest until it double its size.

Shape the dough and let it proof for 20-30minutes.
Egg wash the dough and top it with cheddar cheese. Bake at 200C for 20minutes.

Sweet bun is now ready.

Today is the day where we have to prepare our product for tomorrow's I-Food Exhibition.
We decided to make our Black Sesame Seed Cake And Black Sesame Seed Sweet Bun. Beside that, we also prepared our butter spread together with bread whenever anyone wanted to taste how the exact Organic Black Sesame Seed tasted like.

(During The Event)



On 14/04/2010, the I-Food Exhibition was held in our very own student launch. All students was told to set everything before 9am in the hall. We started preparing what was needed to bring to the hall at 8am. Food that was supposed to be presented had been prepared the day before.


This was the booth that the MPM student gave to our group. It is located next to the band's and our group member beside us was the group that was doing the Hack's cookies (Aisyah, Amar and Chan's group). Food that was prepared for the exhibition was our Black Sesame Sweet Buns, Black Sesame Butter Cake, and bread spread with our very own Black Sesame Butter. The stuff that was for display/decoration such as table cloth, plates, roses, etc was prepared by our group member Kak Nor .




These were the bands that was performing at the I-Food Exhibition. Lucky draw was also been held twice during this event.




The VIPs that were invited as judges by our college to attend our I-Food Exhibition.


VIPs was seated on stage.

Students are welcome to come and taste our product and leave their comments at the booth.



This is what it looks like during the event. Unitar students, participants are enjoying themselves at the event.



The exhibition ended at about 1.30pm, then all students was told to clean up the hall and kitchen and are allowed to have their lunch before returning back to the hall again for a Speech.

Later after the speech, certificate was presented to the class representative and was given out to the rest of the students.

Recommendation

We recommend that for the next event, it is best if the faculty could provide a more spacious booth because it is a little small for two groups to share a table since many stuff are brought for display. And another thing is that, UNITAR should be more able to provide ingredients if a student wants to make or create something, because it limits the students as they have to think about the universities budget and cutting down ingredients that they have to use. Such as hard to get ingredients and tools.


RECOMMENDATION ON "ORGANIC BLACK SESAME SEED BUTTER"


1. The butter has to be washed thoroughly to ensure it can last very long up to 3 months. To make it last longer up to one year, the butter has to be kept in the freezer.

2. The black sesame seeds have to be mixed with the butter prior to cleaning. This will ensure proper mixing of the butter and the sesame seeds.

3. It must be kept in an air tight container to preserve its freshness.

4. Working on butter is preferred to be carried out near a wash basin for ease of washing.



5. In food exhibition, butter spread should be served in serving bowl containing ice. This is to make the butter solid and does not fall out of shape.



6. Butter for spread and for cooking shall be separated. The butter for spread shall be made slightly saltier.

7.Choose only the best and fresh sesame seed to maintain the good quality of butter

8. choose only the good quality of hard cream to maintain the good result (taste of your butter)

Conclusion

In this semester we had learned a lot about food and ways to innovate them, food is like arts and science combined together and forming something or improving what that had already been exist. People are free to do what ever they like to contribute on food, experimental and testing ways to improve the texture, taste and thru it all evolves and changes ones food or dish to another brand new thing. Food does not only stop at what we eat, we can improve it if we want to and if we try. We have learn from this class that by experimenting ways to see how each procedures is very important in developing and making a final product, thank you to our lecturer for teaching us that creating a new product is not impossible and if we try to do more testing and experiment, we can improve the product until it is nearly to perfection or even creating something out of the blue. All we got to do is let our imagination free and go while, plus hard work,patient and passion is the key to make what seems impossible come to live.
