Fifth Lab Test Of "Black Sesame Seed Butter"

Today would be our last lab test class. Because on the 14th of March 2010, we would be having our exhibition at the Unitar student launch. On the 13th, our group was told to prepare all our product for the exhibition day by Ms Nina.

Anyway, in today's class. We made 2 recipes out of our Black Sesame Seed Butter.
1 : Black Sesame Buttered Fingers with Cheese
2 : Black Sesame Sweet Bun.


Ingredients & Utensils


1) 2tbs Salt
2) 2 1/2 tbs Black Sesame Seed (Blended)
3) 1liter Whipping Cream
4) Ice Water

a) Greased paper
b) Baking tray
c) Clean cloth (optional)

Prepare all the ingredients like the above picture before starting making the Butter.
Beat Whipping Cream with Ice water until the mixture is solidify. Strain the water and repeat the same procedure until the butter is clean.

Later add salt for taste and the blended Black Sesame Seed.
Placed it in a baking tray and let it set in the chiller so that it wont melt and will stay solid.

Black Sesame Buttered Fingers with Cheese

Ingredients

8cups Bread Flour
2tbs Water
1nos Egg
3cups Fresh Milk
1 1/2cups Black Sesame Butter
5tbs Brown Sugar
2tsp Salt
10grm Dry Yeast
20grm Bread Improver
500grm Mascarpone Cheese
60grm Castor Sugar
50grm Castor Sugar (for sprinkle)



First add Flour
Then mix the flour with dry yeast and bread softener.
Add fresh milk
Next add the salt, sugar and brown sugar
Mix the ingredients well
And Add in Black Sesame Seed Butter
Mix the batter till it forms a dough.
Later add water and mix the dough well.
After the dough is done. Let it rest till it rise up to 2 times its size.
Scale the dough to 50grm each. fill the dough with mascarpone cheese and reshape the dough to finger's shape.
Bake the dough at 200C for 15minutes.
Eggs wash and sprinkle sugar and bake it for another 5minutes.


Results

Color : Greyish brown
Flavor : Buttery and sweet.
Odor : Sugary Smell
Texture : Crumbly

Black Sesame Seed Bun

Ingredients

600grm Bread Flour
4tsp Instant yeast
1 1/2tsp Salt
90grm Castor Sugar
24grm Skimmed Milk
1sp Bread Improver
1nos Egg
288grm Water + 60grm Black Sesame Seed Butter
200grm Cheddar Cheese
Prepare all the ingredients.
Add yeast to the bread flour and combined it well.
Then add salt
Add Sugar
Bread improver
And Black Sesame Seed Butter. Mix the ingredients well.
Later add the milk
And add Water, Combined all the ingredients until it forms a soft dough.
Knead the dough and let it rest until it double its size.

Shape the dough and let it proof for 20-30minutes.
Egg wash the dough and top it with cheddar cheese. Bake at 200C for 20minutes.

Sweet bun is now ready.

Results

Color : Light Brown
Flavor : Buttery and and salty.
Odor : Buttery smell
Texture : Soft

Forth lab test of "Black Sesame Seed Butter"

For today's class, we decided to make butter rice and also chicken stew using our Black Sesame Seed Butter. Like always, the butter is made following the previous classes before.

Ingredients & Utensils

1) 2tbs Salt
2) 2 1/2 tbs Black Sesame Seed (Blended)
3) 1liter Milk
4) Ice Water

a) Greased paper
b) Baking tray
c) Clean cloth (optional)

Prepare all the ingredients before starting making the butter.

Beat the all the ingredients together with ice water and strain the water dry until the butter solidify and clean.

Placed it in a cake mold and placed it in the chiller so that the butter stays solid and doesn't melt.
Butter is now ready to be use.

Black Sesame Buttered Rice


Ingredients

4cups : Uncooked Rice (washed clean)
2nos : garlic (chopped)
60gm : Black Sesame Seed Butter
1cube : Chicken Stock
Salt as needed
5cup : Water
1tbs: Black Sesame Seed



Prepare all the ingredients like the picture above.
Preheat the butter in a small pot.
Bring to saute the garlic until golden brown
Add rice and saute it for 20 seconds
Add chicken stock,salt and saute it till it is mixed evenly.
Add water, stir it a little and leave it to boil till it is fully cooked.
End results of the rice

Color : light grey
Flavor : salty and buttery.
Odor : Aromatic with a hench of a buttery smell.
Texture : Soft.

Miss Nina told us that the rice needs more black sesame.
Because the rice is lack of the black sesame taste.

Chicken Stew


Ingredients

1inch : Ginger (sliced)
3nos : Chicken Breast (cube)
1/2nos : Onion(chopped)
3tbs : Coriander Powder
2nos : Celery (cut 4)
1tsp : Garlic (chopped)
1tsp : Salt
4tbs : Black Pepper
1tbs : Vegetable Oil
1/4cup : Brown Sugar
1cup : Water
2cup : Low Fat Milk
2tbs : Black Sesame Seed Butter
1tb : Black Sesame Seed
2nos : Carrot (cube)
2nos : Onions (wedges)
3tbs : Paprika Powder.

Prepare all the ingredients like the picture above.
Start with seasoning the chicken breast first.
Add Coriander Powder.
Chopped garlic, salt and pepper
Mix it well and put it aside for it to absorb the seasoning for at least 30minutes.
Prepare the rest of the ingredients to make the gravy.
Melt Black Sesame Seed Butter and Vegetable Oil in a pot.
Add brown sugar and leave it to melt together with the butter and oil.
Add chicken breast and carrot.
Stir it continuously and leave it to cook for 2minutes.
Add in celery,water, milk, soy sauce, onions. Lastly add salt and pepper for taste.
Serve the chicken stew with Black Sesame Seed Butter Rice.

End results of the rice

Color : light pale brown
Flavor : salty and buttery.
Odor : Aromatic
Texture : Thick Sauce

Third lab test for " Black Sesame Seed Butter"

Today's class our lecturer Ms.Nina suggested us to try and make cakes out of our Black Sesame Seed Butter. Our group decided to try and make Butter Cake.

Ingredients For Black Sesame Seed Butter

3tbs : salt

3tbs : Black Sesame Seed (blended)

1ltr : Milk

Ice Water


Prepare all the ingredients, before moving on making the Black Sesame Seed Butter.

Beat the milk cream with ice water till it solidify. Ice water helps the milk to stay chilled and solid while also cleansing the milk.

Strained all the access water, and repeat the same step till the butter is clean..

Lastly add blended black sesame seeds and also salt for taste.

Chill the butter in a chiller to avoid it from melting. The butter now is ready to be used.

Now we continue the process of making Butter Cake using our Black Sesame Seed Butter.



The ingredients for Butter Cake are

2nos : Eggs.
60g : Black Sesame Seed Butter
190ml : Milk
340g : White Wing's Golden Butter Cake Mix


Add all the ingredients into the mixer, together with White Wing's Golden Butter Cake Mix.
Beat all the ingredients together well, then add the Black Sesame Seeds in. Beat it with medium speed about 5minutes, don't let it be over beat.
Pour the batter into the baking pan.
Bake the cake in an oven over 180C , for about 40-50minutes.
After cake is evenly bake, let it rest and cooled down at room temperature for about 5minutes before taking it out from the mold.
Take the cake out from its mold. The cake is now ready to be serve.


Results.
Color : Golden brown
Flavor : Sweet and buttery.
Odor : Aromatic with a hench of a nutty and buttery smell.
Texture : Moist
