Fifth Lab Test Of "Black Sesame Seed Butter"

Today would be our last lab test class. Because on the 14th of March 2010, we would be having our exhibition at the Unitar student launch. On the 13th, our group was told to prepare all our product for the exhibition day by Ms Nina.

Anyway, in today's class. We made 2 recipes out of our Black Sesame Seed Butter.
1 : Black Sesame Buttered Fingers with Cheese
2 : Black Sesame Sweet Bun.


Ingredients & Utensils


1) 2tbs Salt
2) 2 1/2 tbs Black Sesame Seed (Blended)
3) 1liter Whipping Cream
4) Ice Water

a) Greased paper
b) Baking tray
c) Clean cloth (optional)

Prepare all the ingredients like the above picture before starting making the Butter.
Beat Whipping Cream with Ice water until the mixture is solidify. Strain the water and repeat the same procedure until the butter is clean.

Later add salt for taste and the blended Black Sesame Seed.
Placed it in a baking tray and let it set in the chiller so that it wont melt and will stay solid.

Black Sesame Buttered Fingers with Cheese

Ingredients

8cups Bread Flour
2tbs Water
1nos Egg
3cups Fresh Milk
1 1/2cups Black Sesame Butter
5tbs Brown Sugar
2tsp Salt
10grm Dry Yeast
20grm Bread Improver
500grm Mascarpone Cheese
60grm Castor Sugar
50grm Castor Sugar (for sprinkle)



First add Flour
Then mix the flour with dry yeast and bread softener.
Add fresh milk
Next add the salt, sugar and brown sugar
Mix the ingredients well
And Add in Black Sesame Seed Butter
Mix the batter till it forms a dough.
Later add water and mix the dough well.
After the dough is done. Let it rest till it rise up to 2 times its size.
Scale the dough to 50grm each. fill the dough with mascarpone cheese and reshape the dough to finger's shape.
Bake the dough at 200C for 15minutes.
Eggs wash and sprinkle sugar and bake it for another 5minutes.


Results

Color : Greyish brown
Flavor : Buttery and sweet.
Odor : Sugary Smell
Texture : Crumbly

Black Sesame Seed Bun

Ingredients

600grm Bread Flour
4tsp Instant yeast
1 1/2tsp Salt
90grm Castor Sugar
24grm Skimmed Milk
1sp Bread Improver
1nos Egg
288grm Water + 60grm Black Sesame Seed Butter
200grm Cheddar Cheese
Prepare all the ingredients.
Add yeast to the bread flour and combined it well.
Then add salt
Add Sugar
Bread improver
And Black Sesame Seed Butter. Mix the ingredients well.
Later add the milk
And add Water, Combined all the ingredients until it forms a soft dough.
Knead the dough and let it rest until it double its size.

Shape the dough and let it proof for 20-30minutes.
Egg wash the dough and top it with cheddar cheese. Bake at 200C for 20minutes.

Sweet bun is now ready.

Results

Color : Light Brown
Flavor : Buttery and and salty.
Odor : Buttery smell
Texture : Soft
